Squash and Avocado Salad
(serves 4-6 as a side dish)
Cut into 1/2 cubes:
1 medium zucchini, or other summer squash
Steam very lightly, just a few minutes, so they are still a little crunchy.  Rinse in cold water to stop the cooking, and drain.
Stir together with:
1 avocado, cubed
1   lime, juiced
2 T chopped cilantro
  salt & chilli pepper flakes, to taste
Serve at room temperature or chilled.
Notes & Variations:
  1. Don't overcook the squash.
  2. Make sure the avocado is ripe, but firm.  If it's too mushy, make guacamole instead.
