Squash
and Avocado Salad
(serves
4-6 as a side dish)

Cut into 1/2 cubes: |

medium zucchini, or other
summer squash |
|

|
Steam very lightly, just a few minutes,
so they are still a little crunchy. Rinse in cold water to stop the
cooking, and drain. |

|
Stir together with: |

|
avocado, cubed |
1 |
|
lime, juiced |

chopped cilantro |
|
|
salt & chilli pepper flakes,
to taste |
|
|
|
|
|
Serve at room temperature or chilled. |

Variations:

Don't overcook the squash.

Make sure the avocado is ripe, but firm.
If it's too mushy, make guacamole instead.
