Persian Beet Salad
Clean but do not trim:
1 medium-sized beet
Boil until soft, let cool, remove the skin and stem, and cut into bite-sized pieces.
Stir together with:
1/2 - 1 c yogurt
1/4 c minced mint leaves
salt to taste
Chill and serve.
Notes & Variations:
  1. This is a great, refreshing summer salad with brilliant color.
