Green Beans with Yogurt (Mtsvane Lobios Borani)
(side dish for 6)
Parboil or steam:
1 lb green string beans, trimmed
5 minutes, drain, and chop into 2 inch pieces.
1 medium onion, minced, in
2- 4 T butter
until transparent.  Add the string beans, along with:
1/4 t cinnamon
1/4 t white pepper
a pinch ground cloves
and cook, covered, 10 to 15 minutes, until the beans are soft.  Stir in:
1/2 c chopped fresh herbs (see Notes below)
and cook for a minute, then turn out into a bowl.
Mash or pound together:
1 clove garlic, minced
1/2 t salt
and stir in:
1/2 c yogurt
2 T water
Pour the yogurt mixture over the string beans, garnish with fresh mint or herbs, and serve.
Notes & Variations:

  2. For the fresh herbs, use any combination of:  basil, tarragon, cilantro, parsley, dill, sage, summer savory, mint.
