Guacamole
Slice in half around the pit:
1 avocado
 
Remove the pit and mash the fruit in its skin with a fork.  Scoop the avocado into a bowl and add:
2-3 T Roasted Tomatillo Salsa
2 T  fresh cilantro, minced
    Stir, then flatten the surface and clean the sides of the bowl with a moistened finger or paper towel.  Squeeze:
1 lime
over the guacamole and let it sit.  The lime juice seals the avocado and keeps it from turning brown.  When you are ready to serve it, simply stir the juice in.  Serve with tortilla chips and Pico de Gallo.
Notes & Variations:
  1. A fresh, simple guacamole in unbeatable.  If you can find a ripe avocado, there is no excuse for buying it pre-made.
  2. Any fresh or store-bought salsa can be substituted for the roasted tomatillo salsa.  The better the salsa, the better the results.
  3. Minced red onion is a nice addition.  You can also add chopped tomatoes, minced garlic (if the salsa doesn't have enough), and even some parmesan cheese, but we prefer to keep the guacamole simple and let the flavor of the avocado predominate.
