Pico de Gallo (Beak of the Rooster)
Chop:
2-4 tomatoes
and place in a strainer to let the juice run out.
 
Chop, but keep separate:
1 red or white onion
1-2   fresh jalapeno chilies
1/4 c fresh cilantro
 
Immediately prior to serving, mix all the ingredients together, with the juice of: 
1-2   fresh limes
Notes & Variations:
  1. This is a simple, fresh salsa that is excellent as a dip for tortilla chips, or served as an accompaniment to a Mexican meal.  It is imperative that the ingredients be mixed at the last minute, so that their flavors do not merge.
  2. This dish is only as good as the tomatoes that go into it.  If you don't have homegrown tomatoes, look for vine-ripened tomatoes.
  3. Try adding some chopped cucumber.
