Egg Salad
Mix together:
hard-boiled eggs, chopped
celery, finely chopped
onion, finely chopped
a little fresh lemon juice
a little mayonnaisse
parsley, minced
 
Garnish with paprika and serve.
Notes & Variations:
  1. Substitute plain yogurt for the mayonnaisse.
  2. Use minced shallots or red onions for color. Or add some grated carrot.
  3. Substitute radishes for celery.
